Antioxidant Power Bowl with Kale Goddess Dressing
MAKES 4 SERVINGS
Star Ingredient: Blueberries
Blueberries are packed with vitamins A, C, and E. Vitamin A can help to reduce wrinkles and eliminate dark spots and otherwise blotchy skin. The powerful antioxidants in blueberries also help fight the free radicals in your body that may otherwise damage your skin, and improve circulatory health, which can prevent unwanted lines, cellulite, and varicose veins.
GATHER For the Kale Goddess Dressing:
□ 1 bunch kale, stemmed
□ Juice of 1 lemon
(about 2 tablespoons)
□ 1 ripe avocado, pitted
□ 1 clove garlic
□ ¼ cup filtered water
□ ½ teaspoon Eden Foods sea salt □ ½ cup Eden Foods sesame oil
For Pickled Blueberries:
□ ½ cup blueberries
□ ½ cup apple cider vinegar
□ 1 tablespoon Eden Foods barley malt □ Pinch of red pepper flakes
For Sweet Potatoes:
□ 1 pound sweet potatoes,
cut into wedges
□ 2 tablespoons Eden Foods sesame
oil
□ ½ teaspoon Eden Foods sea salt
For the Salmon:
□ 1 pound wild salmon,
divided into 4 portions
□ 2 tablespoons Eden Foods barley
malt
□ 2 tablespoons Eden Foods sesame
oil
□ ½ teaspoon Eden Foods sea salt
To Assemble:
□ 4 hard-boiled eggs, halved □ 5 ounces baby kale
MAKE IT 1.
To make Kale Goddess Dressing: In a high-speed blender, puree kale, lemon juice, avocado, garlic, water, and sea salt. While motor is running, stream in sesame oil. Set aside.

To make Pickled Blueberries: In a small saucepan, combine blueberries, apple cider vinegar, barley malt and pepper. Bring to a boil, then take off heat and allow to steep for 10 minutes.

To make Sweet Potatoes: Preheat oven to 375°F. Toss sweet potatoes with sesame oil and sea salt and roast for 20 minutes, until tender and golden.

To make Salmon: Glaze salmon with Eden barley malt, sesame oil and sea salt. Bake for 8 minutes, until cooked through.

To serve: Place some baby kale at the bottom of a serving bowl. Top with dressing, sweet potatoes, salmon, pickled blueberries, and eggs.
