paellera and comes in 13 variants, such as the paella negra, or the paella cerdo

en adobo and paella cerdo sisig, both of which suit the local palate. The paella is a guaranteed fiesta on a platter.

No meal would be complete without a refreshing glass of sangria. This classic concoction—a mix of wine, oranges, lemons, sugar and spices—traces its roots from Leon. At Barcino, sangria takes on many forms. There’s Tinto, the red sangria common in the south of Spain, and the Blanco, the white sangria favoured in Catalan regions like Barcelona. There’s also their very own concoction­s: Tropical, white sangria mixed with fruits like pineapple and mango; and Paradise, the classic red enriched with lychee, green apple and a splash of spritz.

Barcino is also home to a vast collection of wines. The brand has partnered with multi-awarded wineries from Beronia, Valiformos­a and Matarromer­a, among others. This carefully curated selection not only pairs well with Spanish dishes, but also celebrates the wine culture the country is known for.

For over two decades, Barcino has spread delight through its cuisine across Metro Manila and has recently brought the experience to Cebu.

To celebrate its 20th anniversar­y, the brand brings in 5-Michelin star and renowned Spanish chef Paco Perez into its fold this 18th to the 20th of October. Guests will get a chance to partake in a tasting menu dinner curated by Perez himself, offering an unforgetta­ble fine dining experience.
