Bearú chef thrilled with response to new restaurant

THE chef at the helm of Bearú, the contempora­ry new restaurant on New Ross town’s South Street, has said he’s ‘ blown away’ by the response he’s gotten since opening in mid-July.

Open Wednesdays to Saturdays for breakfast and lunch, (and also on Friday and Saturday nights for fine dining), the business has been very busy.

Selling freshly prepared food, from pastries to salads and sandwiches, Bearú, (named after the river Barrow), offers what must be one of the best value gourmet breakfast menus in Ireland, with the price of a vegetarian breakfast costing €8 and a kids breakfast for €4.50 or less.

Employing ten staff, Bearú is managed by New Ross woman, Shauna O’Callaghan, who recently moved back to the area from Australia.

“We’re blown away by the support. Everyone seems to be enjoying it and we’ve lots of people coming in. The feedback has been excellent,” said Dave.

Varying the dinner menu from week to week – based on what fresh fish is available to buy locally – Rowley said he buys local, as much as possible.

Having previously worked in restaurant­s and gourmet cafes in Dublin, he is excited to bring his learnings to the palettes of people from the area and to those visiting New Ross.

“We are very conscious of the prices but we are also trying to make sure we are delivering on quality. Expensive prices and values aren’t necessaril­y the same thing.

“I have done tons of hours making sure everything is fresh, from brining briskets of beef and cooking roast chicken, to pulling them apart, for sandwiches.”

With his wife Siobhan working with him on the venture, Rowley said he has a great team around him.
