CHEESE, AVOCADO TOMATO STUFFED

POTATO

Prick a small (80g) Zerella Spud Lite Potato all over with a fork. Line a microwave turntable with a double layer of baking paper. Cook the potato on High/100% for 6-7 minutes or until tender, adding an extra 60 seconds as needed. Use a small, sharp knife to cut a cross on the top of the potato and open the potato out slightly. Fill with 3 tbsp cottage cheese, ½ chopped tomato, ¼ chopped avocado, a little chopped coriander, a little lemon zest and freshly ground black pepper. Serves 1.

JAPANESE STYLE COTTAGE

CHEESE VEGIE STICKS Spoon 3 tbsp cottage cheese onto a plate. Sprinkle with 1 shredded sheet nori (seaweed), and 1 tsp toasted sesame seeds. Serve with 1 carrot, cut into sticks. Serves 1.

BANANA SPLIT
